Chartered Institute of Environmental Health Food Hygiene Courses
Well trained staff are vital to any business and these courses aim to provide both practical food hygiene advice, as well as meet your legal responsibilities in regard to training. For people working in a catering environment the Chartered Institution of Environmental Health (CIEH) Level 2 Award in Food Safety in Catering has been developed to address the new occupational standards in food safety and the recent changes in food safety legislation.
The training programme takes approximately 6 hours to complete and involves a series of teaching sessions followed by an examination consisting of 30 multiple choice questions.
Level 2 Award in Food Safety in Catering
Under food hygiene legislation those staff who handle or prepare open, high risk foods should receive training in food hygiene matters corresponding to their work activities. As a guide, this should be within three months of starting work.

- Food Safety Law
- Food Safety Hazards
- Taking Temperatures
- Refrigeration, chilling and cold holding of foods
- Cooking, hot holding and re-heating of foods
- Food handlers
- Principals of safe food storage
- Cleaning
- Food premises and equipment
- Exam – Thirty question multiple choice exam.
Cost. £57.50 per candidate inclusive of all course materials and the exam paper.
Terms and Conditions. Courses are run subject to a minimum number of bookings. A full refund will be given if North Hertfordshire District Council have to cancel a course. Cancellation or non-attendance following a confirmed booking incurs the full course fee to cover administration costs.
Venue
The course is held at the Council Offices, Gernon Road, Letchworth. Parking is available in the multi-storey car park behind the Council offices.
Courses are delivered in English, although the workbooks and the exam are available in a range of languages. Please ask at the time of booking if you would like any of these.
Candidates only need to bring themselves and a pen and paper.
